Sustainable viticulture - Cultivating excellence in cohesion with environment to ensure the best possible expression of our terroir in our cuvées, we have adopted viticulture methods which are respectful of the soil and the vine. No anti-rot treatments or insecticides, with the elimination of anti-botrytis treatments since 2000, using of pheromones against grape worms and organic fertilizers and soil conditioners. Treatments are targeted and kept to a minimum.

We only intervene where absolutely necessary to keep our vines strong and healthy. The care we take in cultivating the vine is extended to the vinification of our wines, for which we use a process as most natural as possible. We have adopted a non-interventionist approach to allow full expression to our terroirs and grape varieties. Our wines contain: no enzymes, no fining agent the lowest sulphite amount. Our thermoregulated tanks are only washed with hot water (no use of acids).

Natural & selective vinification - Handmade harvest only. We focus on the most qualitative and mature grapes. We only use cuvee juice – the first and best juice that flows from the press ; the second juice does not take part into the vinification process. We mature our wines on their lees in thermoregulated tanks before bottling. We include Grand Cru grapes in our Premier Cru champagnes.

Second fermentation - 15 meters underground in our traditional cellars. Our standards exceed the requirements of the Champagne Appellation. Second fermentation Fresh and constant temperature for a longer and most qualitative fermentation. Bottles are left to mature for between 3 to 10 years, depending on the cuvee. Homemade dosage liquor composed of our own wine blended with locally produced beet sugar.

Long maturations on lees - “Time is the fourth grape variety in our Champagne”. Between three to ten years of ageing in traditional cellars depending on the cuvee.
