The menu opens with the chef’s selection of amuse-bouche and crispy fish-bone waffles filled with mature tofu cream. Discover silky chawanmushi with Hokkaido seafood, a selection of three kinds of sashimi and lightly seared Australian Wagyu tenderloin, followed by Japanese-style dandan noodles with sous-vide chicken. Matcha panna cotta provides an elegant finish.
